  • 1/2 /2 cup butter
  • 1 (8 ounce) package white mushrooms fresh, sliced
  • 1 cup yellow onion finely diced
  • 1/2 /2 cup green bell pepper chopped finely
  • 1/2 /2 cup flour
  • 2 cups chicken broth low-sodium
  • 3 cups chicken shredded or cubed, cooked
  • 1 cup heavy cream
  • 3/4 /4 cup peas frozen
  • 4 ounces diced pimentos canned, drained
  • 1/2 /2 teaspoon garlic powder
  • salt to taste
  • black pepper to taste

Instructions

  1. Melt butter in a large saucepan. Add mushrooms, onion and bell pepper. Saute for a few minutes until veggies are soft and mushrooms are golden brown.
  2. Sprinkle flour over mixture and stir for a few minutes. Slowly whisk in chicken broth and cook over medium heat until thickened.
  3. Reduce heat to low. Add the chicken, cream, peas, pimentos, and garlic powder. Simmer for a few minutes until heated through. Add salt and pepper to taste.
  4. Serve over toast, egg noodles, or biscuits.
