Chicken a la King

Easy, homemade Chicken a la King has a creamy mushroom sauce, chicken, peas and pimentos.

Ingredients

  • ½ cup butter
  • 8 ounces mushrooms sliced, fresh
  • ½ cup onion chopped
  • 1 tsp garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup peas frozen
  • 1 cup Pimentos chopped, drained
  • 4 cups chicken cooked, chopped
  • Serve over prepared egg noodles, rice, toast or biscuits

Instructions

  1. In a large saucepan, melt butter over medium-high heat. Add in mushrooms, onions and cook until they are soft, about 5 minutes.
  2. Season with garlic powder, black pepper and salt.
  3. Add in flour and stir until there are no more specks of flour left. Pour in chicken broth and heavy cream and bring to a boil. Reduce heat to low and simmer until sauce is thickened, about 3 minutes.
  4. Stir in frozen peas, drained pimientos, and cooked chicken and let heat through, 2 to 3 minutes.
  5. Serve hot over cooked rice, pasta, toast, or biscuits.

Notes

  • FRIDGE: Transfer leftovers to an airtight container and allow to cool completely. Then store in refrigerator for up to 3 days.
  • FREEZER: Cream based sauces don't freeze super well, but you can try freezing these leftovers if you'd like. Just transfer to an airtight container and freeze for 2-3 months. Allow to thaw before reheating.
  • To reheat, place chicken in a saucepan or skillet and warm on the stovetop over medium heat. You may need to add a splash of heavy cream or chicken broth to make the dish saucy again.
  • You can also reheat it in the microwave in a microwave safe bowl. We recommend starting with 30 seconds intervals stirring and repeating until warmed through.
