Chicken Alfredo Soup Recipe
Description
This recipe begins by pan-searing chicken breast seasoned with salt and pepper until cooked through, then allowing it to cool before dicing. In a pot, butter sautés diced onion until translucent before adding minced garlic. Flour is whisked in to form a roux, cooking until golden. Incorporating chicken broth and half and half creates a rich, creamy base that's simmered to thicken. Cheese tortellini cook directly in the soup until al dente, absorbing some broth flavor. The diced chicken is added last along with crushed red pepper flakes, salt, and pepper, lending a gentle spicy note balanced by the creamy broth.
The texture varies between the tender chicken chunks and soft pasta, all enveloped in a mildly thick, smooth sauce. Fresh basil and Parmesan garnish the soup, contributing aromatic and umami elements that brighten and deepen the overall flavor.
Chicken Alfredo Soup serves well as a warm starter or a light main, offering a rich and filling bowl especially suitable for cooler weather. The combination of pasta and chicken in a creamy broth provides both comfort and substance.
