Description
Chicken Alfredo Stuffed Shells feature large pasta shells cooked to al dente and filled with a mixture of shredded chicken, cottage cheese, beaten egg, and a trio of Italian cheeses—mozzarella, Parmesan, and Romano. The shells are placed in a baking dish coated with Alfredo sauce, then topped with more sauce and reserved cheese before baking at 350°F until bubbly and golden. Leftover shells store well refrigerated up to three days and can be frozen either before or after baking. When baking from frozen, increase baking time. For reheating, the oven preserves texture best, though microwaving is a quick alternative.
Ingredients
- 30 large pasta shells
- 1 pound chicken breast cooked and shredded, boneless skinless
- 1 ½ cup cottage cheese
- 1 cup mozzarella cheese freshly grated
- ½ cup Parmesan Cheese shredded
- ½ cup Romano cheese shredded
- 1 egg beaten
- ½ teaspoon black pepper
- ½ teaspoon salt
- 15 ounces Alfredo sauce 1 jar, with garlic
- parsley if desired, fresh, for garnish
Instructions
- Preheat oven to 350 degrees Fahrenheit. Spray a 9 x 13 inch baking dish with non-stick cooking spray and set aside.
- Prepare shells to al dente according to package directions. Drain water from shells, pat dry with paper towels.
- In a large bowl combine Mozzarella, Parmesan and Romano cheese. Remove ½ cup for topping. Add cottage cheese, egg, pepper and salt. Stir until well combined. Add chicken and stir until completely combined.
- Spoon 1 cup Alfredo sauce on the bottom of the prepared pan. Stuff shells with chicken mixture either using a spoon or a small scoop. Arrange in prepared pan in single layer. Spoon remaining Alfredo sauce over shells. Sprinkle with reserved cheese.
- Bake in preheated oven at 350 degrees Fahrenheit for 20 minutes or until cheese is lightly browned and bubbly.
- Garnish with parsley and serve immediately.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- You can freeze uncooked stuffed shells (before baking) tightly wrapped for up to 3 months; bake directly from frozen, adding extra time.
- Fully baked leftovers freeze well for about 2 months.
