Chicken and Apple Salad with a Honey Dijon Vinaigrette is the perfect fall salad full of crisp apples, cranberries, crunchy pecans and bleu cheese. This salad is easy to put together and so mouthwatering!

Ingredients
- 1 chicken breast cooked and seasoned
- 2-3 apple small
- 8 ounces lettuce spring mix
- 1 tablespoon lemon juice
- ⅓ cup pecans roasted
- ⅓ cup dried cranberries
- ¼ cup bleu cheese crumbled
Honey Dijon Vinaigrette
- 1 clove garlic
- 1 shallot
- ½ cup olive oil
- ¼ cup balsamic vinegar
- 1 ½ teaspoons honey
- 1 teaspoon Dijon mustard
- salt to taste
- black pepper to taste
Instructions
- Prepare the 1 cooked and seasoned chicken breast for the salad by chopping it into bite-sized pieces.
- Slice the 2-3 small apples into thin slices, and toss the slices with 1 tablespoon lemon juice.
- In a large bowl add the 8 ounces spring lettuce mix, chicken, apples, ⅓ cup roasted pecans, ⅓ cup dried cranberries, and ¼ cup crumbled bleu cheese.
Honey Dijon Vinaigrette
- Finely mince the 1 clove garlic and 1 shallot and add them to a bowl.
- To the same bowl add the ½ cup olive oil, ¼ cup balsamic vinegar, 1 ½ teaspoons honey, 1 teaspoon Dijon mustard, and salt and pepper to taste, and whisk to mix well.
- Pour the dressing over the salad, toss the salad to mix well and enjoy!
