Chicken and Broccoli Recipe
Description
The Chicken and Broccoli Recipe involves seasoning boneless skinless chicken breasts with garlic powder, herbs de Provence or Italian seasoning, salt, and pepper. The chicken cooks in butter and olive oil over medium-high heat until browned on both sides. Meanwhile, broccoli florets are tossed with olive oil, garlic, and Parmesan cheese. After moving the chicken to make room, the broccoli and a splash of water are added to the pan, covered, and cooked until chicken is fully cooked and broccoli is fork-tender. This method steams the broccoli lightly while keeping it coated with savory seasoning and cheese.
The dish balances seasoned, juicy chicken with tender, garlicky broccoli, all finished in one pan for minimal cleanup. The Parmesan adds a subtle nuttiness and slight creaminess without overpowering. Variations include roasting the dish in the oven for crisper broccoli or swapping broccoli for other vegetables like carrots or cauliflower. Adding a slice of provolone cheese melted on top or serving with a Dijon cream sauce can enrich the flavors further.
The recipe offers practical tips for enhanced flavor and texture such as alternate cooking methods for crispier vegetables, seasoning upgrades with dry Ranch seasoning, and ideas for swapping vegetables. These additions give flexibility for different tastes or available ingredients. Serving immediately after cooking ensures the chicken stays moist and the broccoli retains some bite.
Ingredients
- 4 chicken breast pounded to even thickness, boneless skinless
- 1 teaspoon garlic powder
- 1 teaspoon herbes de provence or Italian blend seasoning
- 1 ½ pounds broccoli florets
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 teaspoons garlic or ½ teaspoon garlic powder, minced
- salt to taste
- black pepper to taste
- 3 tablespoons Parmesan Cheese grated
- 2 teaspoons neutral cooking oil generic cooking oil
Instructions
- Season chicken on both sides with garlic powder, Herbs de Provence (or Italian blend), and salt and pepper (I'm pretty generous with the salt and pepper here, go with your gut).
- In a large skillet on medium-high heat, melt butter. Once melted, drizzle 1 tablespoon oil into the pan. Add chicken and brown for 3-4 minutes on each side.
- Toss broccoli florets with 2 teaspoon oil, garlic (or garlic powder) and parmesan cheese.
- Scoot the chicken over in the pan to make room for the broccoli.
- Add broccoli to the pan, add 1/3 cup water (pour it to the side of the chicken and broccoli and not over the top so that it doesn't wash away the seasonings), cover and cook for 15 minutes or until chicken is white throughout and broccoli is fork-tender. (see note for alternate cooking method) Serve immediately.
Notes
- If using an oven-safe skillet, you can skip the water and finish cooking at 400°F for crisper broccoli and roasted flavor.
- Add 1 tablespoon dry Ranch seasoning to the chicken along with the other spices for more flavor, especially kid-friendly.
- Try topping the chicken with provolone cheese and covering for a few minutes before serving to melt the cheese.
- Vegetables like carrots, cauliflower, green beans, bell peppers, or zucchini can be swapped or added for variation.
- Drizzle a quick Dijon cream sauce over the finished dish to add richness and tang.
