Chicken and Chorizo Pasta

This Chicken and Chorizo Pasta brings together strips of chicken breast and slices of Spanish chorizo in a creamy tomato-based sauce. The sauce is flavored with garlic, white wine, and Italian seasoning for a balanced savory note. Tossed with al dente penne pasta, this dish combines tender protein and a rich sauce that clings to each piece of pasta, making it a hearty meal choice. Optional parsley and Parmesan cheese toppings add freshness and a touch of sharpness to finish.

Description

Chicken and Chorizo Pasta features cooked penne tossed with a sauce made from seared chorizo and chicken strips. The chorizo renders fat and crisps up, infusing the sauce with its characteristic smoky and slightly spicy flavor. Garlic and a splash of dry white wine add aromatic depth before diced tomatoes and heavy cream are stirred in, creating a smooth, creamy texture that envelops the pasta.

The dish balances the hearty texture of chicken and the rich, spicy notes of chorizo with a subtly creamy, tomato-forward sauce. Simmering gently allows the flavors to meld without overcooking the chicken. The pasta is cooked al dente to provide a firm bite that contrasts nicely with the tender proteins and sauce.

This pasta works well as a satisfying main course and serves nicely with a sprinkle of fresh parsley for color and grated Parmesan cheese for a sharp umami lift. It’s a filling dish that combines elements of Spanish and Italian cooking styles with familiar ingredients.

  4. Reduce the heat to medium and add the chicken to the pan. Cook it for a few minutes, stirring periodically.
  5. Add the garlic, wine, and Italian seasoning to the pan and cook for 2 minutes.
  6. Stir in the cream and diced tomatoes. Cook for another 5-7 minutes or until the chicken is fully cooked through (but take care not to overcook).
  7. Season with salt & pepper, to taste. Drain the pasta and toss it with the sauce. Add parsley and parmesan cheese if using.

Notes

  • Uncooked chorizo is used here; if substituting cooked or cured chorizo, adjust cooking time to prevent overcooking.
