Chicken and Noodles Casserole
Description
This casserole layers boiled egg noodles with a mixture of chopped cooked chicken breast, thawed mixed vegetables (including carrots, peas, corn, and green beans), cream of chicken soup, sour cream, shredded sharp cheddar cheese, and seasonings like onion and garlic powder, salt, and black pepper. After mixing thoroughly, the mixture is spread evenly in a greased baking dish.
The topping consists of garlic and butter flavored croutons ground into fine crumbs, spread over the casserole before baking. Spraying the top lightly with oil helps achieve a golden, crispy finish. The casserole bakes at 350°F for about 30-35 minutes until heated through and bubbly.
If the topping browns too quickly, covering with foil preserves texture while allowing the casserole to finish cooking. The dish offers a balanced combination of tender noodles, creamy sauce, sharp cheese, and crunchy topping, making it a satisfying meal option.
Ingredients
- 12 oz egg noodles
- 10 oz chicken breast chopped (approximately 4 cups, cooked
- 2 cream of chicken soup reduced sodium, canned
- 1 1/2 cups sour cream
- 2 cups cheddar cheese shredded sharp
- 3 cups mixed vegetables carrots, peas, corn, and green beans, thawed, frozen
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tsp black pepper
- 1 tsp salt
- 5 oz croutons garlic and butter flavored
Instructions
- Heat oven to 350°F.
- Boil the egg noodles for the time directed on package.
- While egg noodles are boiling, in a large mixing bowl combine chicken, cream of chicken soup, sour cream, cheddar cheese, mixed vegetables, onion powder, garlic powder, salt and pepper. Mix to combine.
- Once noodles are done, drain and add to the mixing bowl.
- Add mixture to a greased 13x9 casserole dish and spread evenly.
- In a food processor, blend the croutons until they area fine crumb. Spread croutons evenly across casserole. Spray the top lightly with cooking spray. I like to use a Misto filled with avocado oil.
- Bake 30-35 minutes until bubbly.
Notes
- If the crouton topping browns before the casserole is fully baked, loosely cover with foil to prevent burning while finishing cooking.
