Ingredients

  • 1 tablespoon olive oil
  • 1 onion chopped, medium
  • 2 carrot peeled and sliced, medium
  • 2 celery sliced, ribs
  • 3 cloves garlic minced
  • 8 cups chicken broth
  • 1 pound chicken breast boneless skinless
  • 1 teaspoon thyme dried
  • salt to taste
  • black pepper to taste
  • 1 cup orzo pasta uncooked
  • 2 tablespoons lemon juice optional
  • 2 tablespoons parsley chopped, fresh

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  2. Add minced garlic and cook for 1 minute, until fragrant.
  3. Pour in chicken broth. Add chicken breasts and dried thyme. Season with salt and pepper.
  4. Bring to a boil. Reduce heat to low, cover, and simmer until chicken is cooked through, about 15-20 minutes.
  5. Remove chicken from pot. Shred it with two forks.
  6. Add orzo pasta to the pot.
  7. Cook until orzo is tender, about 8-10 minutes, stirring occasionally to ensure it does not stick to the bottom of the pot.
  8. Add the chicken back to the pot and continue cooking for 2 minutes. Stir in the lemon juice and chopped fresh parsley. Taste and adjust the seasoning if necessary.
