  • 4 chicken breast boneless skinless
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 onion diced, medium
  • 3 cloves garlic minced
  • 1 1/2 cups long-grain white rice uncooked
  • 2 1/2 cups chicken broth low-sodium
  • 1 teaspoon oregano dried
  • 1 teaspoon basil dried
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Parmesan Cheese grated
  • 2 tablespoons parsley optional, chopped fresh, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large, deep skillet or Dutch oven, heat the olive oil and butter over medium heat. Add the chicken breasts and cook until golden brown on both sides, about 6-8 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the diced onion and minced garlic. Cook, stirring occasionally, until the onion is softened and translucent, about 3-4 minutes.
  4. Add the uncooked rice, chicken broth, oregano, basil, salt, and pepper to the skillet. Stir to combine and bring the mixture to a boil.
  5. Reduce the heat to low, place the browned chicken breasts on top of the rice mixture, and cover the skillet with a tight-fitting lid. Simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
  6. Remove the skillet from the heat and transfer the chicken breasts to a plate. Stir the grated Parmesan cheese into the rice until well combined.
  7. Garnish with chopped fresh parsley, if desired.

Notes

  • Long-grain white rice works well in this recipe, as it remains fluffy and separate after cooking. You can use other types of rice, such as basmati or jasmine also.
