Description

This recipe starts with cooking chicken breast with garlic and chopped onion until fully cooked, then removing it from the pan. The creamy sauce is prepared by adding chicken broth, sour cream, crumbled feta cheese, Parmesan, and black pepper to the pan and mixing thoroughly. Fresh spinach is then added and cooked over medium heat until wilted.

The shredded chicken is returned to the sauce and simmered over low heat for 10 to 15 minutes to meld the flavors and heat through. This sauce is served over cooked penne or rigatoni pasta, creating a dish with a creamy, tangy profile from the feta and sour cream combined with spinach and tender chicken pieces.

  • 3 chicken breast cooked and shredded or chopped, boneless, skinless
  • 3 cloves garlic minced
  • ¼ cup onion chopped
  • 1 lb spinach fresh
  • 1 cup chicken broth
  • 8 oz sour cream light
  • ½ cup feta cheese crumbled
  • ¼ cup Parmesan Cheese
  • black pepper to taste
  • 1 lb penne pasta or rigatoni pasta

Instructions

  1. Cook the chicken in olive oil with garlic and onion until completely cooked through. Remove from pan and place in separate bowl. Or you can also bake the chicken ahead of time at 350 for 30-40 minutes.
  2. Add chicken broth, sour cream, feta, parmesean, and pepper and mix thoroughly.
  3. Add spinach to pan and cook on med heat until done.
  4. Add the chicken back into sauce and simmer on low for about 10-15 minutes.
  5. Serve over pasta.
  6. Tip: If you like a thicker sauce, you can mix 1 tablespoon of flour and ¼ cup of cold water and add this to the sauce to thicken it.
