Chicken and Stuffing Casserole
Description
Chicken and Stuffing Casserole uses cooked shredded chicken blended into a creamy combination of condensed cream of mushroom and chicken soups with milk. The dish is assembled in a baking dish and topped with dry stuffing mix coated in melted butter. Baking covered then uncovered crisps the stuffing topping into a buttery, flavorful crumb layer rather than a soft traditional stuffing texture.
The contrast between tender shredded chicken and the crispy, seasoned stuffing topping gives a pleasing texture and flavor. The use of canned soups simplifies preparation while contributing richness to the base. The topping's crispiness comes from the direct butter coating on the dry mix, baked uncovered at the end.
This casserole pairs well with simple steamed vegetables or a crisp green salad to balance its richness. It is convenient for feeding a crowd and makes use of pantry staples like canned soups and stuffing mix.
The recipe notes mention you can also prepare the stuffing according to package instructions before topping if you prefer a classic soft stuffing texture. Using brands like Pepperidge Farm or Stove Top for the stuffing mix is suggested. The topping can also be replaced with homemade stuffing if desired.
Ingredients
- 4 cups chicken cooked, shredded
- 1 (10.5 ounce) condensed cream of mushroom soup I use Campbell’s Heart Healthy variety, from can
- 1 (10.5 ounce) condensed cream of chicken soup I use Campbell’s Heart Healthy variety, can
- 1 cup milk
- 1 tick butter melted, 8 tablespoons
- 1 (8 ounce) package (about 3 ¾ cups) dry stuffing mix (I use Pepperidge Farm Herb Seasoned Stuffing Mix)
Instructions
- Preheat oven to 350°F (180°C). Grease a 9x13-inch baking dish; set aside. In a large bowl, whisk together condensed soups and milk.
- Stir in cooked chicken; transfer chicken mixture to the prepared baking dish. In a separate bowl, pour melted butter over the dry stuffing mix. Gently stir until all of the stuffing mix is coated with butter.
- Sprinkle the buttered crumbs over the chicken mixture.
- Cover the dish with foil. Bake, covered, at 350°F for about 20 minutes. Remove foil and bake for an additional 10-15 minutes, or until heated through and browned on top.
Notes
- The stuffing topping is intentionally crispy and buttery, differing from traditional soft stuffing textures.
- Use about 8 ounces (3¾ cups) of dry stuffing mix, such as Pepperidge Farm Herb Seasoned or Stove Top.
- If you prefer a soft stuffing texture, prepare the stuffing according to package instructions before topping and adjust baking times accordingly.
- Can substitute homemade stuffing for the dry mix topping as an alternative.
