Description
This casserole starts with toasting frozen waffles until crispy, then cutting them into cubes. Cooked chicken tenders cut into similar-sized pieces are layered with half of the shredded pepper jack cheese and bacon bits in a greased casserole dish. A mixture of eggs, half and half, hot sauce, maple syrup, honey, red pepper flakes, salt, pepper, and garlic powder is poured over the layers, then the casserole sits for 30 minutes to soak in the flavors.
Topping with the remaining cheese and bacon and covering with foil during baking allows the custard to set while keeping moisture, with the final uncovered bake giving a golden crust. Ingredients
- 6 waffle frozen
- 6 large egg
- ¼ cup half and half
- ⅓ cup hot sauce
- ½ teaspoon red pepper flakes
- ¼ cup pure maple syrup
- 6 oz pepper jack cheese shredded
- ¼ cup bacon bits
- 2 tablespoon honey
- 1 teaspoon salt
- 1 teaspoon black pepper coarse
- 1 teaspoon garlic powder
- 1 ½ lb. chicken tenders cooked according to directions and cut into 1" cubes, frozen, bag
Instructions
- Preheat the oven to 400 F
- Grease a 9x9" casserole dish or cast iron pan.
- Toast waffles on the lowest setting until crispy and hot. Cut the waffles into 1" cubes.
- Combine the eggs, half and half, hot sauce, maple syrup, red pepper flakes, honey, salt, garlic powder, and pepper in a bowl.
- Layer the chicken, waffles, ½ of the bacon and ½ of the cheese in the pan.
- Pour in the liquid mixture. Let the casserole sit for 30 minutes.
- Sprinkle the remaining shredded cheese and bacon over the top of the casserole.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes
- Garnish with fresh herbs and drizzle with maple syrup or sriracha. Enjoy!
