  • 1 tablespoon olive oil
  • 1 onion chopped, medium
  • 3 garlic minced, cloves
  • ¾ pound chicken breasts thawed and patted dry, cut into ½-inch cubes, fresh or frozen
  • 1 teaspoon oregano dried
  • 1 teaspoon basil dried
  • ¼ teaspoon red pepper flakes crushed
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper freshly ground
  • 5 cups chicken broth low-fat, reduced-sodium
  • 8 ounces yellow corn frozen
  • 8 ounces artichoke hearts thawed and coarsely chopped, frozen
  • 1 diced tomatoes no-salt-added, 14.5 ounce can
  • 1 spinach package slightly thawed, frozen, chopped, 10 ounces
  • 1 tablespoon lemon juice fresh

Instructions

  1. Heat the oil in a large saucepan over medium heat. Add the onion and garlic and sauté for 6–7 minutes. Add in chicken, oregano, basil, crushed red pepper, salt, and ground black pepper and sauté for about 5 minutes.
  2. Add in the broth, corn, artichoke hearts, and tomatoes and bring to a boil. Lower the heat, simmer, uncovered, for 20 minutes.
  3. Break up the frozen spinach into small pieces and add to the soup. Simmer 5 minutes until heated through. Add in the lemon juice and remove from the heat.
