Description
Chicken Bacon Avocado Sandwich combines tender rotisserie chicken breast pulled by hand with smoky, cooked bacon strips and slices of provolone cheese on fresh focaccia bread. A homemade mustard mayo sauce—made from mayonnaise, sour cream, and yellow mustard—adds tang and creaminess.
The sandwich is built with layers of lettuce, tomato, thinly sliced red onion, and ripe avocado to introduce freshness and texture contrast. Light seasoning with salt and pepper enhances the flavors. The focaccia provides a tender yet sturdy base for the fillings.

Ingredients
Mustard Mayo (Kneaders Sauce Copycat)
- 1/2 cup mayonnaise real
- 2 Tbsp sour cream
- 2 tsp yellow mustard
Sandwich Ingredients (for 2 large sandwiches):
- 6 oz chicken breast hand pulled, from a rotisserie chicken
- 4 Bacon cooked, strips
- 2 lices provolone cheese
- 2 lettuce large leaves
- 4-6 lices tomato
- 1/4 red onion thinly sliced, small
- salt
- black pepper
- 1 avocado peeled, pitted and sliced

Instructions
How to Make Copycat Kneaders Mayo:
- In a small bowl, stir together: 1/2 cup mayo, 2 Tbsp sour cream and 2 tsp mustard.
How to Assemble the Chicken Sandwich:
- Focaccia bread, Sauce, Provolone Cheese, Chicken, bacon, lettuce, tomato, purple onion, avocado, salt & pepper and top it with the second piece of focaccia spread with sauce.
- Slice the sandwich in half and serve. This is a sandwich you'll make again and again. Keep this one in mind when you have company over and you want to impress them but don't have a ton of time to cook :).
Notes
- If focaccia bread is unavailable, use your favorite artisan bread for a delicious alternative.
