Chicken Cacciatore
Description
The Chicken Cacciatore recipe uses 6 pounds of chicken pieces browned in olive oil to develop a golden exterior that holds up through simmering. Adding sliced onions, garlic, bay leaves, and spices like black pepper, red pepper, salt, and fresh parsley creates a flavorful base. The addition of white wine contributes acidity and depth during slow cooking, balancing the tomato pulp and earthy mushrooms introduced later. The gradual simmer over low heat allows the flavors to meld and the mushrooms to soften without overcooking the chicken. The resulting dish features tender chicken in a rich sauce with textural contrast from the mushrooms and aromatic notes from the herbs and spices. It serves well as a hearty meal accompanied by bread or pasta to soak up the sauce.
