Chicken Caesar Pasta Salad

Ingredients

Caesar Dressing

  • 1/2 cup yogurt reduced-fat or whole milk are best, plain, Greek
  • 2 tablespoons mayonnaise
  • 3 tablespoons lemon juice freshly squeezed
  • 1 tablespoon olive oil
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon garlic powder
  • salt freshly ground, to taste
  • black pepper freshly ground, to taste
  • 1/4 cup Parmesan Cheese finely grated

Chicken Caesar Pasta Salad

  • 12 ounces fusilli pasta uncooked
  • 2 chicken breast chopped, cooked
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomato halved
  • 1/4 cup Parmesan Cheese finely grated

Instructions

  1. Combine all of the ingredients for the dressing in a bowl and whisk together until combined. 
  2. Cook the pasta according to package instructions. Drain and rinse the pasta under cold water. 
  3. Add the pasta to a large serving bowl along with the chicken, romaine lettuce, and tomatoes. 
  4. Pour in half of the Caesar dressing and all of the Parmesan cheese. Toss together until everything is coated in the dressing. Add additional dressing if desired. Taste for seasoning and serve or cover and refrigerate until ready to serve. 

Notes

  • This pasta salad will serve 4 as a main dish and 6 as a side dish.
