Chicken Caesar Salad
Description
The Chicken Caesar Salad features torn romaine lettuce dressed in a classic Caesar dressing prepared by emulsifying mayonnaise with anchovy paste or filets, Worcestershire sauce, Dijon mustard, lemon juice, garlic, and olive oil. Freshly grated Parmesan cheese is incorporated into the dressing for richness.
Cooked chicken breast, either grilled, rotisserie, or poached, is added to the salad, providing protein. Additional Parmesan cheese is shaved or shredded on top along with optional anchovy filets for enhanced umami. Croutons add crunchy texture.
This salad is assembled by tossing the lettuce gently with dressing to coat lightly, then plating and topping with chicken and garnishes. The dressing can be made ahead and stored refrigerated up to four days. It serves well for a light but satisfying meal.

Caesar Salad Dressing
- 1/2 cup mayonnaise
- 2 1/2 teaspoons anchovy paste or 1 or 2 anchovy filets
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 3 Tablespoons lemon juice
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 cloves garlic crushed
- 1/3 cup olive oil
- 1/4 cup Parmesan Cheese finely grated, fresh

- 1 head romaine lettuce torn or cut into bite sized pieces.
- 16 ounces chicken breast grilled, rotisserie or poached, cooked
- 1/4 cup Parmesan Cheese additional, shredded or shaved
- 4 anchovy optional, filets
- 1/2 cup croutons optional
Instructions
Caesar Salad Dressing
- In a food processor fitted with a blade, blend first six ingredients, mayonnaise through salt and pepper.
- With motor running add crushed garlic cloves, 30 seconds or so to mince garlic.
- With motor running pour olive oil in a slow, steady stream until emulsified.
- Store in refrigerator in an airtight container for up to four days.
Chicken Caesar Salad
- In a large bowl, toss romaine lettuce gently, with 1/2 cup dressing until leaves are coated. Don't over dress! Add more dressing, if needed. Plate salad on four plates and add 4 ounces of cooked chicken, additional parmesan, croutons, and anchovy fillets.
- Makes approximately 3/4 cup
- Store in an airtight container for up to 4 days.
Notes
- Dressing yields about 3/4 cup and can be stored airtight in the refrigerator for up to 5 days.
