Description
The recipe begins by sautéing diced onion and minced garlic in coconut oil until golden. Chicken breast cubes are browned thoroughly before adding soy chorizo and chopped green bell pepper. The dish is seasoned with paprika, cumin, and salt, which infuse the meat and vegetables with savory, slightly smoky flavor.
Basmati rice is then stirred in and toasted briefly before adding water. The mixture is brought to a boil, then simmered covered until the rice absorbs the liquid and becomes tender, about 25 minutes. A rest period with the lid on ensures the rice finishes cooking evenly.
The finished skillet combines the distinct tastes of chorizo and chicken with aromatic spices, complemented by the freshness of chopped cilantro and lemon juice sprinkled on top before serving. This method provides convenience and depth of flavor in a single pan.
Ingredients
- 2 tbsp coconut oil or any other oil
- 1 onion diced, medium
- 4 garlic minced, cloves
- 1 chicken breast cut into cubes
- 6 oz soy chorizo or chorizo of your choice, vegan
- 1 green bell pepper chopped, medium
- 1 tsp paprika
- 1/2 tsp cumin
- 1 tsp salt
- 1 cup basmati rice
- 1 1/2 to 2 cups water
- cilantro chopped, to top
- lemon chopped, to top
Instructions
- Heat coconut oil in a cast iron skillet over medium heat. Saute onion until golden brown, add garlic and saute for 2 minutes.
- Add in chicken cubes and cook until all sides are browned, about 10 minutes.
- Add in soy chorizo and bell pepper. Cook for 5 minutes.
- Add in paprika, cumin and salt. Stir well.
- Add in Basmati rice, stir well for two minutes. Add in 1 1/2 cup water and turn the heat to high until it starts boiling. Turn the heat to medium, cover and cook for about 25 minutes until the rice is fully cooked. Check after 10 minutes to make sure the water hasn't finished. If there is no water and the rice is not cooked yet, then add 1/2 cup more water.
- Once cooked, turn the heat off and let it sit for 5 minutes with the lid on.
- Serve warm with chopped cilantro and lemon.
