Salad:

  • 2 egg large, sliced, hard-boiled
  • 4 trips Bacon crispy, chopped, cooked
  • 2 chicken breast medium-size, sliced (6 oz each, baked
  • 2 cups salad greens
  • ½ cup cherry tomato halved
  • 1 avocado sliced; use Haas variety
  • 2 oz blue cheese crumbled

Instructions

  1. In a small bowl, whisk the dressing ingredients until they emulsify into a rich salad dressing.
  2. Arrange the salad greens on a large serving platter.
  3. Assemble the salad toppings on top of the greens. I usually add them in the following order: chicken, tomatoes, avocado, eggs, bacon, and blue cheese.
  4. Drizzle the dressing on top of the salad and serve.

  • Cook bacon, chicken breast, and hard-boiled eggs ahead of time and refrigerate; assembling the next day streamlines preparation.
