Description
The Chicken Cobb Salad features cooked chicken breasts sliced and paired with crisp bacon, eggs, fresh salad greens, halved cherry tomatoes, sliced Haas avocado, and crumbled blue cheese. The dressing, an emulsion of olive oil, red wine vinegar, mayonnaise, Dijon mustard, salt, pepper, and garlic powder, is whisked until combined, adding a sharp and aromatic note to the layered salad.

Ingredients

- ½ cup cherry tomato halved
- 1 avocado sliced; use Haas variety
- 2 oz blue cheese crumbled
Instructions
- In a small bowl, whisk the dressing ingredients until they emulsify into a rich salad dressing.
- Arrange the salad greens on a large serving platter.
- Assemble the salad toppings on top of the greens. I usually add them in the following order: chicken, tomatoes, avocado, eggs, bacon, and blue cheese.
- Drizzle the dressing on top of the salad and serve.
Notes
- Cook bacon, chicken breast, and hard-boiled eggs ahead of time and refrigerate; assembling the next day streamlines preparation.
- Keep salad greens and avocado separate until just before serving to prevent sogginess and browning.
