Chicken Cordon Bleu Casserole
Description
This casserole combines cubed raw chicken breast seasoned with dried thyme, paprika, salt, and pepper with torn ham and slices of Swiss cheese in a baking dish. A creamy topping made from cream of chicken soup, milk, fresh Italian parsley, thyme, garlic powder, salt, and pepper is spread over the layers. The dish is finished with a dry stuffing mix mixed with melted butter to form a crunchy topping.
Baked at 350°F for 45 minutes, the casserole achieves a bubbling, golden crust while the filling cooks through and melds flavors. The layered approach mimics the classic chicken cordon bleu components with a casserole convenience.
This casserole can be served alone or over rice or buttered egg noodles. It can be frozen before baking by covering tightly with foil and thawed overnight, then topped with buttered stuffing and baked as directed.
Ingredients
- 3 raw chicken breast cut into 1" pieces, boneless, skinless
- 1/2 tsp thyme dried
- 1/4 tsp paprika
- salt to taste
- black pepper to taste
- 8 lices ham Torn into 1" pieces, NatureRaised Farms brand
- 6-8 lices swiss cheese
- 1 can cream of chicken soup
- 1/4 cup milk whole
- 1 Tbsp Italian parsley minced, fresh
- 1 tsp thyme minced, fresh
- 1/4 tsp garlic powder
- salt to taste
- black pepper to taste
- 1 box stuffing I use Stove Top brand, herbed
- 6 Tbsp butter melted, unsalted
Instructions
- Preheat oven to 350 degrees F, and spray 3 quart baking dish (13x9") with non-stick cooking spray.
- Cover bottom of baking dish with bite sized chicken pieces. Sprinkle with dried thyme, paprika, salt and pepper. Top with torn ham pieces.
- Place Swiss cheese slices on top of ham and chicken, so they are covered.
- In a small mixing bowl, combine cream of chicken soup, milk, parsley, thyme, garlic powder, salt, and pepper until smooth, thick and creamy.
- Spoon mixture over top of the cheese and spread to cover pan.
- In a mixing bowl, combine dry stuffing mix with the melted butter. Sprinkle over the top of the baking dish, so it is covered in buttered stuffing.
- Bake for 45 minutes, until golden brown and bubbly.
Notes
- Freeze casserole before baking by covering tightly with foil, then thaw overnight in refrigerator before topping with buttered stuffing and baking.
- Serve casserole plain or over rice or buttered egg noodles for a complete meal.
