Chicken Cordon Bleu Casserole
Description
The Chicken Cordon Bleu Casserole brings together cooked egg noodles with chopped cooked chicken and diced ham, combined with cream of chicken soup and Swiss cheese, creating a creamy base. The mixture is placed in a casserole dish and topped with crushed buttery crackers to add a crispy crust once baked. The heating in the oven melds the flavors and softens the crackers to a crunchy topping. The Swiss cheese adds a mild nutty flavor, while the ham and chicken provide savory bites throughout.
This casserole offers a filling main dish that can be served warm as a family dinner. It works well to use leftover cooked chicken, such as rotisserie, and holiday ham. The rich, creamy texture with a crisp cracker topping makes it a satisfying meal on a cool day. It pairs nicely with a fresh green salad or steamed vegetables for balance.
Notes suggest substitutions like mozzarella or provolone cheese if Swiss is unavailable. Leftovers keep well refrigerated for several days and can be reheated in small portions. For freezing, do not add the cracker topping first to avoid sogginess; add it just before baking after thawing. This approach helps preserve the desirable texture of the topping.
Ingredients
- 2 cups egg noodles cooked
- 2 cups chicken chopped, cooked
- 8 ounces ham cooked and diced
- 2 cream of chicken soup I like the kind by Pacific Foods, 10.5 oz cans
- 2 cups swiss cheese shredded
- salt to taste
- black pepper to taste
- parsley to taste, dried
- 18 butter crackers crushed, Ritz brand
Instructions
- Preheat oven to 400 degrees. Grease a large 9 x 13 casserole dish and set aside.
- Combine all ingredients except crushed crackers in a large bowl and mix well. Transfer mixture to prepared baking dish and sprinkle with the crushed crackers.
- Bake in preheated oven for 25 minutes until heated through and bubbly. Allow to cool slightly before serving. Enjoy!
Notes
- Swiss cheese can be swapped with mozzarella, provolone, or mild cheddar according to preference.
- Using cooked chicken from a rotisserie makes preparation faster and convenient for busy evenings.
- Store leftovers in an airtight container in the refrigerator for up to 4-5 days and reheat small portions in the microwave.
- For freezing, prepare the casserole without the crushed cracker topping. Freeze in an airtight container up to 4 months, thaw overnight in the fridge, add the cracker topping before baking.
- Adding the cracker topping before freezing may result in a soggy texture after thawing.
