Ingredients

Servings
  • 5-6 cups chicken shredded or cut into 1-inch cubes, or rotisserie chicken
  • 1/2 pound ham cut into 1-inch cubes, deli
  • 3 cups cavatappi pasta cooked and drained

Cheese Sauce:

  • 4 tablespoons butter unsalted
  • 4 tablespoons all-purpose flour
  • 4 cups milk
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper ground
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 cups mozzarella cheese shredded

Topping:

  • 2 cups swiss cheese shredded

Instructions

  1. First, preheat the oven to 375 degrees F. Then, lightly grease a 9x13 baking dish with olive oil or non-stick cooking spray. Set aside.
  2. Cook pasta per box directions, drain, and drizzle with olive oil.
  3. Place a large skillet over medium heat, add butter, and melt.
  4. Once melted, add flour and stir until thoroughly combined; cook for 1-2 minutes.
  5. Next, add the milk slowly, whisking continuously until thoroughly mixed. Let it come to a simmer.
  6. Reduce heat to low, add salt, pepper, paprika, and garlic powder. Stir to combine, taste, and adjust.
  7. Turn off the heat and add shredded mozzarella; stir until thoroughly melted.
  8. Add cooked pasta to a large bowl, add cubed chicken and cubed ham. Add cheese sauce and stir until well combined and the ingredients are evenly coated.
  9. Transfer the mixture to the prepared pan and level the top with a spatula.
  10. Top with the shredded Swiss cheese.
  11. Bake uncovered in the preheated oven for 25-30 minutes, until the cheese on top is lightly golden-brown and the mixture bubbles.
  12. Remove from oven, let it stand for 10 minutes, and garnish with freshly chopped parsley before serving.
