  • 3 cups chicken broth
  • 2 cups potato cubed
  • 1 cup carrot diced
  • 1 cup corn
  • teaspoons salt
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 2 cups milk
  • 3 cups cheddar cheese shredded
  • 2 cups chicken cooked, diced

Instructions

  1. In a large pot, bring chicken broth to a boil.
  2. Reduce heat and add potatoes, carrots, corn, salt and pepper. Cover and simmer for 10 minutes.
  3. In another pan, melt butter and add flour. Mix well. Slowly add milk and cook until thickens. Stir in cheese and mix until melted.
  4. Add cheese/milk mixture, and cooked chicken, to veggie mixture and stir until combined and cooked through. ENJOY!
