Chicken Dijon

Chicken Dijon is an easy dinner recipe using chicken breasts in a white wine and mustard sauce.

  • 2 large chicken breast
  • sea salt coarse sea salt and freshly ground pepper
  • black pepper coarse sea salt and freshly ground pepper
  • 1 tablespoon extra virgin olive oil
  • 1 shallot , thinly sliced
  • 3 cloves garlic thinly sliced, fresh
  • 3/4 cup white wine , or low sodium chicken broth
  • 2 tablespoons butter unsalted
  • 1 tablespoon Dijon mustard
  • 1 tablespoon whole grain mustard coarse
  • 3 teaspoons thyme fresh leaves
  • 2 teaspoons Worcestershire sauce
  • 1/2 cup heavy cream

Instructions

  1. Butterfly both chicken breasts and then tenderize them using the flat size of a meat mallet to make them a uniform 1/4 inch thick. Season both sides of the chicken with salt and pepper.
  2. Heat a large skillet over medium heat. Add the olive oil, heating for 1 minute and then adding the chicken breasts. Sear on both sides until golden brown, approximately 3-4 minutes per side. Remove to a paper towel lined plate.
  3. Without wiping out the skillet, add the shallot and garlic, sauteing for 1 minute.
  4. Deglaze the pan with the white wine (or chicken stock), scraping up the browned bits with a spoon.
  5. Stir in the butter, Dijon mustard, whole grain mustard, fresh thyme and Worcestershire sauce. Simmer for 3-4 minutes. Stir in the cream.
  6. Return the chicken breasts to the skillet, spooning the sauce over top, simmer on low for 5 minutes. Sauce will reduce, but not be super thick.
  7. Serve over couscous, rice or buttered noodles to help soak up the sauce.
