Chicken Divan
Description
This Chicken Divan recipe starts with lightly sautéing bite-sized chicken pieces along with diced onion and celery in butter, then added broccoli is cooked briefly. The combined mixture is mixed with a sauce consisting of cream of chicken soup, sour cream, milk, garlic, onion, and mustard powders, and half of the shredded cheddar cheese. The mixture is transferred to a casserole dish and topped with remaining cheddar cheese.
It bakes covered for 20 minutes at 350°F, then uncovered with a topping of crushed Ritz crackers mixed with melted butter and baked further at 400°F until the top is browned and crisp. The creamy sauce and tender vegetables contrast with the crunchy topping, making the dish comforting and textured.
Serving over rice, biscuits, or mashed potatoes complements the rich casserole well. This recipe yields about 4 cups of diced chicken, roughly from 3 medium chicken breasts.
Pro tips include alternatives such as using cooked chicken directly to skip sautéing, omitting onions and celery, or using frozen broccoli (thawed and optionally sautéed). Adjust baking times accordingly. Crushed Ritz crackers equal about half a sleeve or 14 crackers. This recipe also appears in The Cozy Cookbook.

- Cooked chicken can be used; then sauté just vegetables. Alternatively, omit onion and celery, mix all raw ingredients, and bake covered at 375°F for 40 minutes before topping.
- Frozen broccoli can be thawed and patted dry; sauté optional depending on desired softness.
- Half a sleeve of Ritz crackers (about 14) equals ½ cup crushed topping.
