Chicken Divan Casserole Recipe
Description
The Chicken Divan Casserole features diced cooked chicken and broccoli mixed with a rich sauce formulated from mayonnaise, cream of chicken soup, Parmesan and cheddar cheeses, lemon juice, curry powder, and garlic powder. The layered casserole is assembled with broccoli and chicken in the middle and sauce spread over the top. The topping of French fried onions and crushed Ritz crackers adds a crunchy, savory crust when baked.
Baked covered initially and then uncovered, the casserole finishes with a bubbly, golden top. The curry powder adds a subtle warm spice note that complements the creamy texture and cheese flavors. This dish works well as a hearty main course served with a side salad or rice.
Variations include substituting cream of chicken soup with cream of celery or mushroom soup for different flavors. Using fresh broccoli is an option. For a thinner sauce, adding chicken broth to the wet ingredients can adjust consistency. The casserole serves eight and can be reheated in the oven to retain texture and creaminess.
