  • 1 cup mayonnaise
  • 21 ounces cream of chicken soup 2 cans (undiluted)
  • ½ cup Parmesan Cheese shredded
  • ½ cup cheddar cheese shredded sharp
  • 1 tablespoon lemon juice fresh
  • ½ teaspoon curry powder
  • ½ teaspoon garlic powder
  • 18 ounces broccoli florets thawed, frozen, baby
  • 4 cups chicken breast about 2 pounds before cooking, cooked, diced
  • ½ cup French fried onions
  • 1 Ritz crackers about 35 crackers, crushed, sleeve

Instructions

  1. Preheat the oven to 350º Fahrenheit. Spray a 9x13 baking dish with cooking spray.
  2. In a small bowl, combine the mayonnaise, chicken soup, cheeses, lemon juice, curry and garlic powder. Stir well. 1 cup mayonnaise, 21 ounces cream of chicken soup, ½ cup shredded Parmesan cheese, ½ cup shredded sharp cheddar cheese, 1 tablespoon fresh lemon juice, ½ teaspoon curry, ½ teaspoon garlic powder
  3. Spoon about ½ cup of the mixture into the bottom of the prepared pan and spread it around. Spread the broccoli florets on the bottom of the pan. Top with the diced chicken. Sprinkle with the french fried onions. 18 ounces frozen baby broccoli florets, 4 cups diced cooked chicken breasts, ½ cup french fried onions
  4. The spread the remaining sauce over the chicken, covering the top of the casserole. Sprinkle the cracker crumbs over the casserole. 1 sleeve of Ritz crackers
  5. Cover with aluminum foil. Bake for 30 minutes.
  6. Uncover and bake for 5 more minutes or until heated through.

Notes

  • The recipe serves eight, with one serving as 1/8 of the casserole.
  • Cream of celery or mushroom soup can be used instead of cream of chicken soup for a variation in flavor.
  • Fresh broccoli can replace frozen if preferred.
  • To thin the sauce, add 1/2 cup chicken broth to the wet ingredients before assembling.
