  • 2 tbsp garlic parsley salt
  • neutral cooking oil for cooking chicken, generic cooking oil
  • 4 tbsp butter unsalted
  • 1 tbsp olive oil
  • 1 cup onion diced
  • 1/2 cup celery diced
  • 1 cup carrot chopped
  • 3 garlic pressed, cloves
  • 1/4 cup flour
  • 1 qt half and half
  • 24 oz chicken broth
  • 16 oz gnocchi
  • 1 cup spinach chopped
  • 1/2 tbsp parsley chopped
  • salt to taste
  • black pepper to taste

Instructions

  1. Season the chicken on both sides with garlic parsley salt. Preheat the skillet over medium-high heat and cook the chicken until it's golden brown. Poke the chicken with a knife to see if it's cooked through. Let the chicken rest for about 5 minutes and dice it into 1-inch cubes.
  2. Dice, chop, and prepare the veggies for the soup.
  3. Melt the butter with oil in a large saucepan over medium heat. Add in the diced onion, celery, carrots, and pressed garlic. Cook the veggies, stirring them occasionally until they soften. Whisk in the flour and cook the mixture for about 1 minute.
  4. Pour in the half-and-half and cooked chicken and bring the soup to a simmer. Add in the chicken broth and bring it to a simmer again.
