Chicken in Creamy Chipotle Sauce
Description
This recipe takes chicken breasts and seasons them before pan-frying to a light golden brown. Onions are gently softened in olive oil and then blended with garlic, chicken bouillon, cream, chicken broth, and chipotle salsa to form a creamy sauce with smoky and spicy notes. The sauce is gently heated and reduced over low heat to prevent curdling of the cream.
The cooked chicken is returned to the sauce to finish cooking and soak up the chipotle-infused cream sauce. The result is a juicy chicken with a luscious, smooth sauce that combines smoky, spicy, and savory flavors with a touch of richness from the cream and broth.

Ingredients
- 2 chicken breast cut in half lengthwise
- ¼ onion cut into thin slices
- 1 teaspoon garlic minced
- 1 tablespoon chicken bouillon Knorr Suiza brand
- 2 tablespoons olive oil
- 1 ½ cup heavy cream
- ½ cup chicken broth
- ¼ cup chipotle salsa or 2 chipotle peppers in Adobo
- cilantro for garnish
Instructions
- Get out and measure your ingredients.
- Season the chicken breast with salt and pepper.
- Heat the olive oil in a large sauté pan. Add the onion to the oil and sauté on medium low for 7 minutes till translucent and softened.
- Add the garlic, bouillon, cream, chicken broth and chipotle salsa to a blender.
- Blend until smooth.
- Push the onions to the side of the pan and add the chicken. Cook the chicken over medium heat, for 3 to 4 minutes on each side. The need to be lightly golden on each side.
- Remove the chicken from the pan. Turn the heat down to medium low. Pour the sauce into the pan and simmer very low for 4 minutes. Watch closely so it doesn’t boil or the cream can curdle.
- Add the chicken breasts back into the sauce and cook for an additional 4 minutes. Turn the chicken over after 2 minutes.
- Serve immediately over rice or with a side salad, sprinkle the cilantro over the chicken when serving, if desired.
- Serve.
