Description
The recipe cooks ground or cubed chicken seasoned with salt and pepper, then sautés it with garlic and diced yellow onion to soften and build flavor. The chicken is simmered briefly with a blend of hoisin sauce, oyster sauce, soy sauce, rice wine vinegar, ginger paste, and red chili paste, creating a complex umami and mildly spicy sauce.
Diced water chestnuts and sliced green onions are folded in last to impart a crunchy texture and fresh bite. The filling is served spooned into butter lettuce leaves, providing a fresh, crisp vessel for the rich, savory chicken mixture. Ingredients
- 1 tablespoon olive oil
- 1 pound chicken ground or breast cut into small chunks
- salt to taste
- black pepper to taste
- 1 Tbs garlic minced
- ½ cup yellow onion diced
- ¼ cup hoisin sauce
- 2 TBS oyster sauce
- 2 TBS soy sauce
- 1 TBS rice wine vinegar
- 1 tsp ginger paste
- 1 Tsp red chili paste
- 8 ounce water chestnut whole, canned, drained and diced
- 2 green onions thinly sliced
- 1 butter lettuce head
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground chicken and season with salt and pepper, or chunked up chicken breasts
- Brown and crumble chicken, about 3-5 minutes, drain fat. Or cook chicken breast chunks, drain fat.
- After draining, return to heat and stir in garlic, onion, hoisin sauce, oyster sauce, soy sauce, rice wine vinegar, ginger, and chili paste and cook until onions have become translucent, about 2-3 minutes.
- Stir in chestnuts and green onions cooking until tender, about 1-2 minutes;
- Taste and season with salt and pepper, to preference.
- spoon several tablespoons of the chicken mixture into the center of a lettuce leaf and enjoy
