Chicken Liver Pate
Description
The recipe begins by gently browning the majority of the butter to develop a nutty flavor. Shallots and garlic are sautéed briefly in remaining butter, building a flavorful base. Chicken livers are browned on all sides to develop slight caramelization without overcooking, preserving tenderness and moisture.
Seasoning with thyme, salt, and pepper adds subtle earthiness and balance. The addition of brandy is reduced over high heat to concentrate flavor and evaporate alcohol, contributing a subtle complexity. Once cooled, the entire blend is puréed until completely smooth, ensuring a fine texture ideal for spreading on bread or crackers.
The finished pate is topped with melted browned butter, which adds a glossy finish and extra richness. Chilling the pate allows flavors to meld and the texture to firm for easy serving. This preparation is suited for an appetizer or snack.
Ingredients
- 8 tbsp butter divided, unsalted
- 1/2 cup shallot minced
- 1 garlic minced, clove
- 1 lb chicken liver tissue and fat trimmed
- 1 tsp thyme dry
- 1 tsp salt adjust to taste
- 1/2 tsp black pepper adjust to taste, ground
- 1/4 cup brandy
Instructions
- In a small pan, place 6 tbsp of butter. Cook on low until the butter is melted and lightly browned. Remove from heat, set aside.
- Preheat a pan on medium heat. Add remaining 2 tbsp of butter, shallots, and garlic. Sauté for a few minutes until shallots are translucent.
- Add chicken livers to the pan and cook on all sides until lightly browned.
- Remove from the heat, add thyme, salt, pepper, and brandy. Place it back on the stovetop, and turn heat to high. Cook until the liquids turn into a syrup, about 3 minutes. Remove from the heat and give it time to cool off.
- Once cooled, place the mixture in a blender or food processor. Blend until the mixture is perfectly smooth.
- Pour the melted butter on top. Leave it in the fridge until ready to serve.
