Description

The recipe starts by grilling fresh chicken livers until just cooked, providing a slightly firm but tender texture. Separately, onion and carrot are sautéed to soften and sweeten before combining with the livers. Cream cheese is added to contribute richness and smoothness. Seasoned with black pepper, the mixture is blended until smooth for a consistent pâté.

The final step involves pouring melted butter over the pâté, which increases shelf life by sealing the surface and adds extra butter flavor. The pâté is then cooled and refrigerated until set. This method excludes alcohol, making it suitable for those avoiding it.

Ingredients

  • 350 g chicken liver fresh
  • 1 onion
  • 1 carrot
  • 3 tablespoon full-fat cream cheese
  • 4 tablespoon butter
  • 2 tablespoon olive oil
  • ¼ teaspoon black pepper ground

Instructions

  1. Rinse the chicken livers with cold water, then gently pat dry with kitchen paper.
  2. Heat up a grilling pan or an electric grill and grill the livers on both sides for about 6-7 minutes or until cooked through.
  3. Heat up the olive oil, peel and chop the onion and fry it until golden.
  4. Add the peeled and chopped carrots to the pan.
  5. Sautee for about 3 minutes until soft, then add the chopped chicken livers and stir.
  6. Add the cream cheese and season with ground pepper.
  7. Use a hand blender to blend until smooth.
  8. Transfer the chicken liver pâté to two ramekins, melt the butter, then pour it over the pâté. 
  9. Leave to cool, then cover with clingfilm and refrigerate until the butter is set.

Notes

  • To keep the pâté fresh, pour melted butter over the surface before refrigerating to create an airtight seal.
  • Transfer the pâté into ramekins or similar dishes before adding the butter seal and wrapping with clingfilm for storage.
