Description

The marinade mixes olive oil and acidic elements like lemon juice, balsamic vinegar, and soy sauce to tenderize and flavor chicken. Garlic, Dijon mustard, Italian seasoning, brown sugar, and Worcestershire sauce add layers of savory, sweet, and umami notes. Kosher salt and black pepper season the mixture for a rounded taste.

Chicken should marinate in this mixture from one hour up to twelve hours, allowing the flavors to penetrate. Because of the sugar content, grilling should be done over medium heat to prevent burning, particularly with bone-in pieces that benefit from indirect heat to cook thoroughly.

  • 1/2 cup olive oil
  • 1/4 cup lemon juice freshly squeezed
  • 1 tablespoon garlic minced
  • 1/4 cup balsamic vinegar
  • 1/4 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 1/3 cup brown sugar
  • 2 teaspoons Italian seasoning dried
  • 1 tablespoon Dijon mustard
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper

Instructions

  1. Place all the ingredients in a large bowl or resealable gallon sized bag.
  2. If using a bowl, whisk to combine the ingredients. If using a bag, seal the bag and shake to combine the ingredients.
  3. Add 2-3 pounds of chicken, then marinate for at least 1 hour, or up to 12 hours.
  4. Proceed with cooking method of your choice.

Notes

  • Prepare the marinade up to 3 days ahead and keep refrigerated.
  • If the olive oil solidifies in the fridge, let it sit at room temperature for 20 minutes before use.
  • Grill chicken over medium heat to avoid burning sugar in the marinade.
  • For bone-in pieces requiring longer cooking, use indirect heat on the grill to cook chicken fully without charring.
