Ingredients

Servings
  • 1 lb ground chicken
  • 1 egg
  • ½ cup breadcrumbs regular or gluten-free
  • 2 Tablespoon milk cow's milk or almond milk
  • ½ cup Parmesan Cheese shredded
  • 1 Tablespoon olive oil
  • 2 garlic pressed, cloves
  • 2 Tablespoon parsley chopped
  • 1 teaspoon salt ½ tsp black pepper
  • 1 teaspoon black pepper ½ tsp black pepper
  • 1 teaspoon Italian seasoning
  • parsley for garnish, chopped, fresh

Instructions

  1. Mix all ingredients in a bowl until well incorporated, but be careful not to overmix it.
  2. Using a 1-inch scoop, take from the mixture and make meatballs using your hands to form the balls. (You can dip your hands in a bowl with water when they get too sticky to help make your meatballs smoother.)
  3. Place on a parchment lined baking sheet and bake in a preheated 400 F oven for about 20 - 25 minutes, or until cooked through.
  4. Take out from the oven and let rest for 5 minutes.
  5. Serve with your favorite side and salad.

Notes

  • Don't over mix the ground chicken with the other ingredients. Everything should be combined, but overworking it can produce tough and chewy meatballs.
  • If you prefer, you can cook these meatballs in a little oil in a skillet. Just be sure that they reach an internal temperature of 165F before serving.
  • These meatballs also make for a great appetizer, serve with toothpicks and your favorite dip.
