Chicken Nachos Recipe

Ingredients

  • 1 cup corn kernels fresh or frozen
  • 10 ounces tortilla chips about 8 cups, baked
  • 2 1/4 cups chicken breast cooked shredded
  • 1 cup black beans drained and rinsed, canned
  • 1 3/4 cups cheddar cheese shredded, reduced-fat, or Monterey Jack cheese
  • 1 tomato diced
  • 2 avocado diced
  • 1 jalapeno pepper sliced (optional)
  • 1/3 cup green onion sliced
  • 1/4 cup cilantro chopped, fresh
  • 1/3 cup Greek yogurt for serving, nonfat
  • salsa for serving

Instructions

  1. Preheat the oven to 350°F. If using frozen corn, thaw it.
  2. Arrange half of the tortilla chips on a large baking sheet. Sprinkle half of the shredded chicken, black beans, corn, and cheese over the chips.
  3. Add another layer of chips and top with the remaining chicken, black beans, corn, and cheese.
  4. Bake in the preheated oven for 10-13 minutes, or until the cheese is melted and bubbly.
  5. Remove from the oven and top with diced tomatoes, avocado, jalapeño slices, green onions, and cilantro. Serve immediately with nonfat Greek yogurt and salsa on the side.
