Description
In this casserole, egg noodles are cooked to a tender state and then combined with cooked chicken, cream of chicken soup, milk, shredded cheddar cheese, peas, carrots, garlic powder, onion powder, salt, and pepper. The mixture is transferred to a baking dish and covered with foil to bake until heated through, allowing the flavors to meld and the casserole to become creamy.
The dish finishes with a sprinkling of parsley which adds a fresh herb note. Ingredients
- 12 ounces egg noodles uncooked
- 4 cups chicken cooked, chopped
- 2 ounce cans cream of chicken soup
- 1 cup milk
- 1 cup cheddar cheese shredded
- 2 cups pea or frozen mixed vegetables, frozen
- 2 cups carrot or frozen mixed vegetables, frozen
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- salt to taste
- black pepper to taste
- 2 tablespoons parsley chopped
- cooking spray
Instructions
- Preheat the oven to 350 degrees F. Coat a 9"x13" pan with cooking spray.
- Cook the egg noodles according to package directions.
- In a large bowl, combine the noodles, chicken, soup, milk, cheese, peas and carrots, garlic powder, onion powder and salt and pepper to taste.
- Place the noodle mixture in the prepared dish and cover with foil. Bake for 30 minutes or until heated through. Sprinkle with parsley and serve.
Notes
- Use leftover, roasted, or rotisserie chicken for convenience.
- Extra wide egg noodles help maintain texture better in the casserole but standard wide noodles will also work.
- Frozen peas and carrots can be replaced by any small-cut frozen vegetable blend.
