Description
This Chicken Noodle Soup begins by simmering chicken breasts in a large pot of chicken broth along with peeled and chopped carrots, diced onion, and celery stalks. As the chicken cooks, the broth absorbs flavors from the aromatics. After cooking, the chicken is removed and shredded, returning to the pot once egg noodles are cooked until tender. Fresh thyme, parsley, salt, and black pepper season the soup, creating a balanced flavor profile.
The egg noodles contribute a pleasantly soft texture that complements the tender chicken pieces. The simmering method allows the flavors to meld without overcooking ingredients, retaining the integrity of the vegetables and chicken. Ingredients
- 10 cups chicken broth
- 2 chicken breast defrosted, large
- 2 carrot peeled and chopped
- 1 onion diced, small
- 2 celery diced, stalks
- 10 oz egg noodles
- ½ Tbs thyme
- ½ Tbs parsley
- salt to taste
- black pepper to taste
Instructions
- In a large stock pot add your chicken broth, chicken breasts, carrots, onion, and celery and bring to a boil, reduce heat and simmer until chicken is cooked.
- Remove chicken from broth and shred (we like to use our stand mixer to shred).
- Add your egg noodles to the broth and bring to a boil and reduce heat and simmer until pasta is cooked.
- Add back in your chicken, thyme, parsley, salt and pepper and bring to another boil to heat through.
