Description
Chicken Noodle Soup is prepared by first sautéing garlic, onion, and celery in butter until soft. Adding chicken stock, carrots, cooked chicken breast, small pasta, and poultry seasoning completes the ingredients. The soup is brought to a boil, then simmered for about 20 minutes, allowing the flavors to meld and the vegetables to become tender while the pasta cooks through. The result is a warm broth with soft vegetables, tender chunks of chicken, and pasta that holds up without becoming mushy, assuming the pasta is cooked in the broth. For freezer-friendly or make-ahead versions, cooking the pasta separately and adding it at serving helps maintain the soup's texture.
This soup works well as a light but satisfying meal on its own or paired with bread or salad. The poultry seasoning adds a subtle herbal note that blends well with the chicken and vegetables. It’s suitable for family meals or when a soothing warm dish is desired.

Ingredients
- 2 tablespoons butter
- 3 cloves garlic minced
- 1 onion diced
- 4 celery diced, stalks
- 4 carrot peeled and diced, large
- 64 ounces chicken stock
- 2-3 chicken breast cooked and diced, large
- 1 1/2 cup pasta we used ditalini, small
- 2-3 tablespoons poultry seasoning
Instructions
- In a large pot, melt the butter and add the garlic, onion and celery. Cook until the celery and onions are translucent.
- Add the remaining ingredients (broth, carrots, chicken, pasta and poultry seasoning).
- Bring to a boil, then reduce to a simmer for 20 minutes.
Notes
- Cook pasta separately if freezing or making ahead to prevent it from soaking up all the broth.
- Add pasta to individual servings when ready to eat for best texture.
