Chicken Pesto Sandwich

The Chicken Pesto Sandwich features grilled, thinly pounded chicken breast layered with pesto-mayo spread, fresh mozzarella, bacon, arugula, and sun-dried tomatoes inside toasted ciabatta rolls. The filling combines savory grilled chicken and bacon with creamy, slightly melted mozzarella and the herbaceous quality of pesto, balanced by the freshness of arugula and tart sun-dried tomatoes.

Description

This sandwich starts by pounding chicken breast thin and seasoning it before grilling to cook through. Ciabatta rolls are halved and spread with a mixture of pesto and mayonnaise, topped with fresh mozzarella which is quickly broiled until the edges crisp and the cheese softens.

The sandwich is then layered with the grilled chicken, crispy bacon, peppery arugula, and sun-dried tomatoes for a combination of smoky, creamy, tangy, and fresh flavors. The ciabatta provides a hearty, slightly chewy texture that holds the fillings well.

Serve the sandwich immediately for an enjoyable contrast of warm cheese, grilled chicken, and crisp vegetables. This sandwich can be made using a grill pan or oven if a summer grill is not available.

Ingredients

Servings
  • 1 chicken breast boneless, skinless
  • olive oil for drizzling
  • salt to taste
  • black pepper to taste
  • 2 ciabatta rolls
  • 2 tablespoons pesto
  • ½ tablespoon mayonnaise
  • 4 lices mozzarella cheese fresh
  • 4 lices Bacon cooked
  • arugula
  • sun-dried tomatoes

Instructions

  1. Cut chicken breast in half and pound it to thin it out. Drizzle olive oil over both sides and sprinkle with salt and pepper.
  2. Grill chicken until cooked through.
  3. While chicken is grilling, cut ciabatta rolls in half. Set aside.
  4. Mix pesto and mayonnaise together and spread evenly over the ciabatta roll halves. Top with fresh mozzarella. On the top rack of the oven, broil on high until the bread is golden brown on the edges and the cheese is slightly melted about 2-3 minutes.
  5. Add chicken, bacon, arugula, and tomatoes to each sandwich.
  6. Serve immediately.

Notes

  • Grill chicken using a summer grill, grill pan, or indoor electric grill for best flavor.
  • Use fresh mozzarella for optimal melting and flavor in the sandwich.
  • Ciabatta bread is preferred, but rosemary Parmesan focaccia is a flavorful alternative.
