Chicken Piccata Meatballs

Chicken Piccata Meatballs combine ground chicken, Parmesan, capers, and seasonings into small broiled meatballs served in a lemony garlic sauce with capers and parsley. The meatballs are cooked under the broiler for a crisp exterior and finished simmering gently in the bright sauce, delivering tender bites with a zesty, savory complement.

Description

Ground chicken is mixed with Parmesan cheese, Italian-style or panko breadcrumbs, chopped capers, egg, garlic, salt, pepper, garlic powder, Italian seasoning, onion powder, parsley, and lemon zest to create well-seasoned meatballs. These are portioned into small rounds and broiled first on one side, then flipped to finish cooking with a golden crust.

The sauce is made by sautéing garlic in olive oil and butter, whisking in flour to thicken, then adding chicken broth and lemon juice. Capers, lemon zest, and parsley are stirred in for brightness and herbaceous notes. The broiled meatballs are added into this sauce and cooked covered for a few more minutes to meld flavors and finish cooking fully.

These meatballs can be served over pasta or on their own, garnished optionally with Parmesan cheese, lemon zest, and parsley to enhance the fresh, citrusy, and savory profile characteristic of Piccata.
