Chicken Pinwheel Sandwich Recipe

Forget the usual turkey and cheese! These chicken pinwheel sandwiches with a Greek twist are simple to put together, but have ten times the flavor.

Yogurt Sauce

  • 3 tablespoons Greek yogurt nonfat
  • 3 tablespoons mayonnaise low-fat
  • 1 teaspoon lemon juice fresh
  • 1 teaspoon oregano minced, fresh
  • 1 tablespoon basil thinly sliced, fresh
  • teaspoon kosher salt

Pinwheel

  • 4 whole wheat tortillas
  • 8 ounces chicken breast cooked shredded
  • 2 roasted red pepper thinly sliced, whole or 4 halves
  • 2 ounces kalamata olives thinly sliced (about 16 olives, pitted
  • 2 cups spinach packed, fresh

Instructions

The Yogurt Sauce:

  1. In a medium bowl, stir together Greek yogurt, mayonnaise, lemon juice, oregano, basil and salt.

The Pinwheels:

  1. Divide the yogurt sauce between the whole wheat tortillas and spread evenly. Lay the roasted pepper strips on top of the yogurt sauce.
  2. Divide the shredded chicken, kalamata olives and spinach between the tortillas, and arrange evenly.
  3. Roll each tortilla into a roll, as tightly as you can without the ingredients pushing out. Cut each roll crosswise into 1-inch pieces. Serve.
