Chicken Plantain Sandwich - Sierra Leone Flavours

Ingredients

Servings
  • 1 plantain
  • salt
  • oil for frying
  • 2 sandwich rolls
  • 4 lices of cooked chicken breast

Instructions

  1. Peel the plantain, cut into slices and salt them.
  2. Heat the oil in a frying pan and fry plantain slices for about 2-3 mins on each side until golden brown and cooked through. You might need to do this in two batches. Set cooked plantain pieces aside on kitchen towel and store in a warm place.
  3. Create the sandwiches by layering the rolls starting first with some plantain, then the chicken, then the peanut butter gravy.
