Description
This recipe starts by cooking penne pasta until al dente. Meanwhile, chicken cubes are sautéed in olive oil until cooked through. The sauce is created by heating heavy cream, butter, and Parmesan cheese with sliced carrots, broccoli florets, and diced onion, seasoned with kosher salt and black pepper. This mixture is simmered to thicken over medium heat.
Freshly diced beefsteak tomatoes are added towards the end, adding a fresh component and succulent texture to the creamy sauce. The finished sauce is spooned over the cooked pasta before serving, combining rich dairy flavors with the natural sweetness and crunch of vegetables.

Ingredients
- 8 ounces penne pasta (½ box)
- 1 tablespoon olive oil
- 1 pound chicken breast cubed, boneless, skinless
- 1½ cups heavy cream room temperature
- ¼ cup Parmesan Cheese freshly grated
- 2 tablespoons butter ¼ stick, unsalted
- 1 cup carrot sliced
- 1 cup broccoli florets
- ½ cup yellow onion diced
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper ground
- 2 beefsteak tomato diced
Instructions
- Bring 4 cups of water to a boil. Add in the pasta and cook until al dente.
- While pasta is cooking, heat the olive oil in a large skillet or frying pan set over medium heat, and cook the chicken pieces through.
- Once chicken is fully cooked through, add in the cream, Parmesan cheese, butter, carrots, onion, broccoli, and seasonings.
- Stir on medium heat until the sauce begins to boil. Once it begins to boil, turn down the heat and let the sauce simmer uncovered for 10 minutes.
- Stir in the tomatoes, allowing them to simmer in the sauce for the last 5 minutes. The sauce will thicken as it simmers.
- Remove from heat and serve immediately over the cooked pasta.
