Description

This recipe starts by sautéing sliced red and green bell peppers and onions in olive oil, softening the vegetables. Cooked chicken is added along with fajita seasoning to infuse the mix with Southwestern flavors. The seasoned chicken and vegetable mixture is spread onto two corn tortillas, then topped with grated mature cheddar cheese and covered with the remaining two tortillas.

The quesadillas are cooked one at a time in a dry pan, briefly on each side to crisp the tortillas and melt the cheese inside. The cooking produces a balance of crispy golden exterior with melted, gooey cheese and savory chicken inside. The bell peppers and onions add sweetness and texture.

  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 onion sliced
  • 100 g chicken cooked
  • 35 g fajita seasoning
  • 4 corn tortillas
  • 30 g cheddar cheese grated, mature
  • 0.5 tablespoon olive oil

Instructions

  1. Heat 0.5 tablespoon Olive oil and cook 1 Red bell pepper,1 Green bell pepper and 1 Onion for 5 minutes.
  2. Add 100 g Cooked chicken and 35 g Fajita seasoning and cook for a further 3 minutes.
  3. Cover two of the4 Corn tortillas with a generous amount of the chicken mix.
  4. Sprinkle 30 g Mature cheddar over the chicken and vegetable mix
  5. Cover with the other tortilla and cook in a dry pan for 1 minute, one quesadilla at a time.
  6. Carefully flip the whole thing over and cook for a further minute, making sure the cheese has melted.
  7. Cut into quarters and serve.

Notes

  • If no leftover chicken is available, small chopped chicken breasts can be cooked and used.
  • Store-bought fajita seasoning is a convenient alternative to homemade.
  • Add chopped spinach along with the cheese for extra green vegetables.
  • Flour tortillas can be used instead of corn for a softer, more pliable wrap.
