Chicken Rice and Broccoli Casserole
Description
Chicken Rice and Broccoli Casserole combines cooked rice and shredded chicken with fresh broccoli florets, bound together in a creamy sauce incorporating cream of chicken soup, sour cream, mayonnaise, lemon juice, and milk. This mixture is spooned into a baking dish and cooked at 350°F. The raw broccoli cooks during baking but retains some firmness, providing a subtle crunch against the softer rice and tender chicken.
Once baked, cheddar cheese is sprinkled on top and returned to the oven to melt, adding a golden, savory layer that complements the mild tang of the sauce and the fresh brightness from the lemon juice. The overall flavor is balanced and comforting, with creamy texture contrasting with the vegetable bite.
This casserole can serve as a convenient main course and pairs well with simple sides or a fresh salad. It is practical for weeknight dinners due to easy assembly and familiar ingredients.
The notes advise that the dish can be prepared ahead and refrigerated before baking, allowing for flexible meal planning. It also recommends warming the casserole fully before serving and points out that using raw broccoli helps maintain texture rather than over-softening it during cooking.
