  • 1 can cream of chicken soup
  • ½ cup sour cream
  • ½ cup mayonnaise
  • ¼ cup lemon juice
  • 1 cup milk
  • salt to taste
  • black pepper to taste
  • 3 cups rice prepared according to package directions, cooked, or quinoa
  • 3 cups chicken use rotisserie chicken, leftover chicken or even canned chicken, shredded
  • 2 cups broccoli florets
  • 2 cups cheddar cheese shredded

Instructions

  1. Preheat oven to 350 degrees. In a large bowl combine cream of chicken, sour cream, mayonnaise, lemon juice, milk, and salt & pepper.
  2. Gently stir in rice, chicken, and broccoli.
  3. When evenly covered in sauce, spoon the mixture into a 9x13 glass baking dish and bake at 350 degrees for 25 minutes.
  4. Remove from oven, sprinkle with cheese, and return to oven for an additional 10 minutes or until cheese is melted.
  5. Serve with salt, pepper, and lemon juice for garnish.
