Instructions

Homemade Marinara Sauce

  1. Heat 1 tablespoon of oil in a medium-sized saucepan over medium heat. Add garlic, 3/4 teaspoon salt, oregano, and pepper flakes. Cook stirring until fragrant.
  2. Stir in tomatoes and tomato paste, and increase heat to high. When ingredients get to a boil, reduce the heat to medium-low and simmer for about 20 minutes. Season with salt and pepper.

Chicken Rollatini

  1. Slice each chicken breast in half horizontally into two pieces.
  2. Place chicken pieces on plastic wrap and cover with another piece of wrap. With a meat mallet pound sliced chicken breasts to 1/4-inch thickness.
  3. Season one side of the chicken with Italian seasoning and Place a slice of prosciutto and cheese on top of the chicken with 2-3 sprigs of broccolini.
  4. Roll the chicken and secure it with a toothpick or small bamboo stick.
  5. Add 3/4 cup of marinara sauce to the bottom of a 9" x 13" baking dish and place prepared chicken breasts seam side down over the sauce.
  6. Top the chicken with the remaining pasta sauce and sprinkle the top with parmesan cheese. Bake for 30 minutes or until the internal temperature of the chicken reaches 165°F.

Notes

  • If you don't have broccolini, feel free to swap it for kale, spinach, or asparagus.
  • You can also add some sun-dried tomatoes for an extra burst of flavor!
  • Swap out the provolone for a layer of ricotta or fresh mozzarella.
  • If you prefer a sweeter marinara sauce, you can add a teaspoon of sugar to your marinara sauce.
