Chicken Rollatini Recipe Stuffed with Prosciutto

Easy chicken rollatini recipe with chicken breasts stuffed with prosciutto, cheese, and broccolini, and topped with marinara sauce.

Ingredients
- 3 each boneless skinless chicken breasts sliced horizontally
- 1 bunch broccolini trim thick stalks
- 2 teaspoons Italian seasoning
- 6 lices proscuitto
- 6 lices Provolone cheese
- 1/4 cup Parmesan Cheese shredded
- 2 cups marinara sauce homemade or jarred
Homemade Marinara Sauce
- 1 tablespoon extra-virgin olive oil
- 2 each garlic cloves minced
- 3/4 teaspoon salt
- 1/4 teaspoon oregano
- 1/8 teaspoon red pepper flakes
- 28 ounce crushed tomatoes
- 2 tablespoons tomato paste
- 2 tablespoons fresh basil coarsely chopped
Instructions
Homemade Marinara Sauce
- Heat 1 tablespoon of oil in a medium-sized saucepan over medium heat. Add garlic, 3/4 teaspoon salt, oregano, and pepper flakes. Cook stirring until fragrant.
- Stir in tomatoes and tomato paste, and increase heat to high. When ingredients get to a boil, reduce the heat to medium-low and simmer for about 20 minutes. Season with salt and pepper.
Chicken Rollatini
- Slice each chicken breast in half horizontally into two pieces.
- Place chicken pieces on plastic wrap and cover with another piece of wrap. With a meat mallet pound sliced chicken breasts to 1/4-inch thickness.
- Season one side of the chicken with Italian seasoning and Place a slice of prosciutto and cheese on top of the chicken with 2-3 sprigs of broccolini.
- Roll the chicken and secure it with a toothpick or small bamboo stick.
- Add 3/4 cup of marinara sauce to the bottom of a 9" x 13" baking dish and place prepared chicken breasts seam side down over the sauce.
- Top the chicken with the remaining pasta sauce and sprinkle the top with parmesan cheese. Bake for 30 minutes or until the internal temperature of the chicken reaches 165°F.
Notes
- If you don't have broccolini, feel free to swap it for kale, spinach, or asparagus.
- You can also add some sun-dried tomatoes for an extra burst of flavor!
- Swap out the provolone for a layer of ricotta or fresh mozzarella.
- If you prefer a sweeter marinara sauce, you can add a teaspoon of sugar to your marinara sauce.
