Ingredients
- 3 cups chicken breast See Note 1, rotisserie; meat
- 1/2 cup celery diced (2-3 ribs)
- 3 green onions diced fine (See Note 2)
Dressing
- 3/4 cup mayonnaise
- 1 tbsp Dijon mustard See Note 3
- 2 tbsp lemon juice fresh
- 2 tbsp parsley chopped, fresh
- 1 tbsp dill chopped, fresh
- 1/2 tsp salt
- 1/2 tsp black pepper ground
Instructions
- In a medium sized bowl whisk together the mayonnaise, Dijon mustard, lemon juice, parsley, dill, salt and pepper.
- Cut the chicken into small cubes and add to the mixing bowl. Add celery, green onions and toss to mix thoroughly. Season to taste.
- Chill or serve immediately over salad greens, in a lettuce wrap, stuffed in a bell pepper, on bread for sandwiches or with crackers.
Notes
- Rotisserie chicken breast meat is convenient and provides about 3-4 cups from two large breasts.
- Using canned, drained chicken (12.5 oz cans) is an acceptable substitute if fresh chicken is unavailable.
- Diced red onion can replace green onions; soaking in water for 10 minutes reduces sharpness.
- Dijon mustard can be swapped for yellow or another preferred mustard without major flavor change.
