- 1/2 cup chopped pecans (toasted or raw)
- 2 green onion sliced (about 1/2 cup
- 1/3 cup dried cranberries roughly chopped
Dressing
- 1 (5.3 oz) container Greek yogurt heaping 1/2 cup, fat-free, plain
- 3 Tbsp mayonnaise
- 1 1/2 Tbsp apple cider vinegar
- 1 1/2 Tbsp maple syrup or honey, real
- 1 Tbsp minced rosemary fresh
- 1 tsp Dijon mustard
- 1/8 tsp nutmeg (optional)
- salt freshly ground
- black pepper freshly ground
- lettuce for serving, or whole grain bread
Instructions
- Add chicken, apples, pecans, green onions, and cranberries to a large mixing bowl.
- In a separate small mixing bowl mix together greek yogurt, mayonnaise, vinegar, maple syrup, rosemary, dijon mustard, and nutmeg. Season with salt and pepper to taste.
- Pour over chicken mixture then toss to evenly coat.
- Store in the fridge up to 2 days. Serve in lettuce or on whole grain bread.
Notes
- After sitting for a few hours, the chicken may absorb the dressing, causing the salad to appear drier; adjust by adding more Greek yogurt, mayonnaise, or a splash of water to reach the desired creaminess.
