Ingredients

  • 12 ounces chicken breast about 3 cups, cooked, shredded or diced
  • ½ cup celery sliced
  • ½ cup red grapes halved
  • 3 tablespoons almonds toasted, sliced
  • 2 scallions sliced
  • 3 tablespoons mayonnaise made with avocado oil
  • 3 tablespoons Greek yogurt plain, 2% fat
  • 2 teaspoons lemon juice fresh
  • 1 teaspoon Dijon mustard
  • ¾ teaspoon Za’atar or other herbs/spices, optional
  • salt
  • black pepper

Instructions

  1. Place the chicken, celery, grapes, almonds, and scallions in a large bowl.
  2. Mix the mayonnaise, yogurt, lemon juice, mustard, and za’atar (or other herbs/spices) together in a separate bowl.
  3. Pour the dressing over the other ingredients and stir to combine. Season with salt and pepper to taste.
