  • 1 tablespoon brown sugar minced ginger
  • 1 tablespoon fish sauce
  • 1 tablespoon ginger
  • 1 teaspoon Turmeric ground
  • 1 teaspoon Coriander ground
  • 2 cloves garlic minced
  • 1 ½ lb chicken breast cut into long, thin strips, boneless
  • 2 large red bell pepper cut into 1-inch squares
  • peanuts to serve, chopped peanuts, minced red pepper or chili pepper

Peanut Satay Dipping Sauce

  • ¼ cup peanut butter natural
  • 2 tablespoons water or soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 clove garlic finely minced
  • salt to taste, sea salt

Instructions

  1. Mix the rice vinegar, soy sauce, brown sugar, fish sauce, ginger, turmeric, coriander, and garlic in a medium-sized bowl. Add the chicken and toss to coat. Place the bowl into your fridge and let the chicken marinate for 30 minutes, or up to 4 hours.
  2. In a small bowl, mix the peanut butter, lime juice, soy sauce, brown sugar, and garlic. Taste and add salt if desired.
